A standard immersion heater consists of a heating element, thermostat, and thermal overload/over-temperature function, which has been required by law since 2004. The thermostat should be set between 60°C and 65°C, especially if there is a pump connected to the immersion heating system, as excessively hot water caused by a thermostat failure could result in the pump leaking.
If the thermostat is set below 60°C, bacteria can form. New immersion heaters supplied by immersion-heater.ie also include a limit thermostat function, factory set to 90°C.
If the thermostat in your immersion element fails, the over-temperature function will trip and the thermostat will need to be manually reset.
